  • 700 g Korean udon noodles (fresh wheat noodles)

  • 2 tbsp chili oil
  • 2 tbsp sugar
  • 0.25 cup reserved noodle water

Instructions

  1. Cook the Korean udon noodles according to package directions, reserving 1/4 cup of noodle water before draining
  2. Melt unsalted butter in a large pan over medium heat
  3. Add minced or sliced garlic and chili flakes, stirring until fragrant
  4. Add the cooked udon noodles to the pan
  5. Pour in soy sauce, chili oil, and sugar (if using)
  6. Toss everything together, adding reserved noodle water as needed to create a light sauce
  7. Top with grated parmesan cheese and serve immediately
