Ultimate Sweet & Savory Hawaiian-Style Slow Cooker Chicken

A delicious slow cooker chicken dish with pineapple and savory Asian-inspired flavors

Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup pineapple chunks
  • 0.5 cup soy sauce
  • 0.33 cup brown sugar
  • 0.25 cup ketchup
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 3 cloves garlic
  • 1 tsp fresh ginger
  • 1 red bell pepper
  • 1 small onion
  • 1 tbsp cornstarch
  • 2 tbsp water
  • salt
  • pepper

Instructions

  1. Place chicken evenly in the bottom of the crockpot.
  2. In a bowl, whisk together pineapple with juice, soy sauce, brown sugar, ketchup, honey, rice vinegar, garlic, and ginger.
  3. Pour the sauce over the chicken, ensuring everything is well coated.
  4. Add bell pepper and onion on top.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
  6. For a thicker sauce, remove chicken and whisk cornstarch slurry into the sauce. Cook on HIGH for 10–15 minutes until thickened.
  7. Return chicken to the crockpot and spoon sauce over the top.
  8. Season with salt and pepper to taste and serve warm over rice.
