Ultimate Sweet & Savory Hawaiian-Style Slow Cooker Chicken
A delicious slow cooker chicken dish with pineapple and savory Asian-inspired flavors
Ingredients
- 2 lbs boneless, skinless chicken thighs or breasts
- 1 cup pineapple chunks
- 0.5 cup soy sauce
- 0.33 cup brown sugar
- 0.25 cup ketchup
- 2 tbsp honey
- 1 tbsp rice vinegar
- 3 cloves garlic
- 1 tsp fresh ginger
- 1 red bell pepper
- 1 small onion
- 1 tbsp cornstarch
- 2 tbsp water
- salt
- pepper
Instructions
- Place chicken evenly in the bottom of the crockpot.
- In a bowl, whisk together pineapple with juice, soy sauce, brown sugar, ketchup, honey, rice vinegar, garlic, and ginger.
- Pour the sauce over the chicken, ensuring everything is well coated.
- Add bell pepper and onion on top.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
- For a thicker sauce, remove chicken and whisk cornstarch slurry into the sauce. Cook on HIGH for 10–15 minutes until thickened.
- Return chicken to the crockpot and spoon sauce over the top.
- Season with salt and pepper to taste and serve warm over rice.
