A spicy, smoky Nigerian favorite made with tender grilled chicken and a bold peanut seasoning that packs serious flavor. Perfect for summer cookouts, easy weeknight dinners, or whenever you want to impress without trying too hard.

Ingredients

  • 2 boneless skinless chicken thighs
  • 4 tablespoon suya spice
  • 2 tablespoon peanut oil

Instructions

  1. Preheat oven to 425°F.
  2. Wash and pat dry the chicken thighs. Slice the thighs into thin strips and place in a bowl.
  3. Add the suya spice and peanut oil to the bowl and mix.
  4. Thread the chicken thighs onto the skewers.
  5. Lightly oil a baking sheet and arrange the chicken thighs on it.
  6. Bake for 20 minutes, turning halfway through.
  7. Using a meat thermometer, make sure the internal temperature of the chicken is at least 165°F.
  8. Let the chicken rest for a few minutes before serving.
