Buttery Garlic Zucchini and Mushroom Skillet

A quick and easy skillet dish featuring tender zucchini and golden mushrooms in a savory buttery garlic sauce

Ingredients

  • 2 medium zucchini
  • 12 oz mushrooms
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic
  • 0.5 cup vegetable broth
  • 1 tsp soy sauce
  • 1 tsp fresh thyme leaves
  • 0.5 tsp crushed red pepper flakes
  • salt
  • black pepper

Instructions

  1. Heat olive oil and butter together in a wide skillet over medium heat until melted and shimmering.
  2. Add mushrooms in a single layer and cook undisturbed for 4–5 minutes until golden brown.
  3. Stir in zucchini and cook for another 3–4 minutes until tender but still vibrant.
  4. Add garlic and sauté for 30 seconds until fragrant.
  5. Pour in vegetable broth and soy sauce, stirring gently to deglaze the pan.
  6. Sprinkle in thyme, red pepper flakes, salt, and pepper.
  7. Simmer for 2–3 minutes until the sauce thickens slightly and coats the vegetables.
  8. Remove from heat and serve hot, spooning extra sauce over the top.
