Buttery Garlic Zucchini and Mushroom Skillet
A quick and easy skillet dish featuring tender zucchini and golden mushrooms in a savory buttery garlic sauce
Ingredients
- 2 medium zucchini
- 12 oz mushrooms
- 3 tbsp butter
- 2 tbsp olive oil
- 4 cloves garlic
- 0.5 cup vegetable broth
- 1 tsp soy sauce
- 1 tsp fresh thyme leaves
- 0.5 tsp crushed red pepper flakes
- salt
- black pepper
Instructions
- Heat olive oil and butter together in a wide skillet over medium heat until melted and shimmering.
- Add mushrooms in a single layer and cook undisturbed for 4–5 minutes until golden brown.
- Stir in zucchini and cook for another 3–4 minutes until tender but still vibrant.
- Add garlic and sauté for 30 seconds until fragrant.
- Pour in vegetable broth and soy sauce, stirring gently to deglaze the pan.
- Sprinkle in thyme, red pepper flakes, salt, and pepper.
- Simmer for 2–3 minutes until the sauce thickens slightly and coats the vegetables.
- Remove from heat and serve hot, spooning extra sauce over the top.
