Fiery Gochujang Chicken Stir Fry with Caramelized Veggies
A spicy Korean-inspired stir fry featuring tender chicken thighs and caramelized vegetables coated in a fiery gochujang sauce
Ingredients
- 1.5 lb boneless chicken thighs
- 2 tbsp vegetable oil
- 1 small head cabbage
- 1 onion
- 1 red bell pepper
- 3 cloves garlic
- 1 tbsp fresh ginger
- 3 tbsp gochujang
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp brown sugar or honey
- 1 tsp chili flakes
- 1 tbsp rice vinegar
- sesame seeds
- green onions
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and stir-fry for 5-6 minutes until lightly browned and cooked through. Remove and set aside.
- In the same pan, add onion, cabbage, and bell pepper. Stir-fry for 3-4 minutes until slightly caramelized.
- Add garlic and ginger and cook for 30 seconds until fragrant.
- Stir in gochujang, soy sauce, sesame oil, brown sugar, chili flakes, and rice vinegar.
- Return chicken to the pan and toss to coat evenly in the spicy sauce.
- Cook for another 2-3 minutes until glossy and well combined.
- Garnish with sesame seeds and green onions before serving hot.
