Fiery Gochujang Chicken Stir Fry with Caramelized Veggies

A spicy Korean-inspired stir fry featuring tender chicken thighs and caramelized vegetables coated in a fiery gochujang sauce

Ingredients

  • 1.5 lb boneless chicken thighs
  • 2 tbsp vegetable oil
  • 1 small head cabbage
  • 1 onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 3 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar or honey
  • 1 tsp chili flakes
  • 1 tbsp rice vinegar
  • sesame seeds
  • green onions

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken and stir-fry for 5-6 minutes until lightly browned and cooked through. Remove and set aside.
  3. In the same pan, add onion, cabbage, and bell pepper. Stir-fry for 3-4 minutes until slightly caramelized.
  4. Add garlic and ginger and cook for 30 seconds until fragrant.
  5. Stir in gochujang, soy sauce, sesame oil, brown sugar, chili flakes, and rice vinegar.
  6. Return chicken to the pan and toss to coat evenly in the spicy sauce.
  7. Cook for another 2-3 minutes until glossy and well combined.
  8. Garnish with sesame seeds and green onions before serving hot.
