- 1 tsp Dried oregano
- 0.5 tsp Black pepper
- 1.5 tbsp Olive oil

- In the same skillet, add sliced onions with remaining 0.5 tbsp olive oil, a pinch of salt, and cook over medium-low heat for 6-8 minutes, stirring frequently, until onions are golden and caramelized. Set aside.
- Place the tortilla wrap on a pizza stone or baking sheet lined with parchment paper.
- Distribute the shredded mozzarella evenly across the tortilla, leaving a small border around the edges.
- Scatter the crispy pancetta pieces over the cheese layer.
- Distribute the caramelized onions evenly across the surface.
- Sprinkle grated Parmesan cheese over the top, followed by dried oregano and black pepper.
- Preheat your oven to 425°F (220°C) and bake for 10-12 minutes until the cheese is melted and bubbly, and the tortilla edges are crispy and lightly browned.
- Remove from oven and allow to cool for 1-2 minutes before slicing. Cut into 4-6 pieces and serve hot.
