Crispy Tortilla Wrap Pizza with Pancetta & Caramelized Onions

Ingredients

  • 1 piece Large flour tortilla wrap
  • 100 g Pancetta or bacon
  • 0.5 medium Yellow onion
  • 1 cup Mozzarella cheese
  • 0.25 cup Parmesan cheese
  • 1 tsp Dried oregano
  • 0.5 tsp Black pepper
  • 1.5 tbsp Olive oil
  • 0.25 tsp Salt

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat. Add diced pancetta and cook for 4-5 minutes until crispy, stirring occasionally. Remove with a slotted spoon and set aside.
  2. In the same skillet, add sliced onions with remaining 0.5 tbsp olive oil, a pinch of salt, and cook over medium-low heat for 6-8 minutes, stirring frequently, until onions are golden and caramelized. Set aside.
  3. Place the tortilla wrap on a pizza stone or baking sheet lined with parchment paper.
  4. Distribute the shredded mozzarella evenly across the tortilla, leaving a small border around the edges.
  5. Scatter the crispy pancetta pieces over the cheese layer.
  6. Distribute the caramelized onions evenly across the surface.
  7. Sprinkle grated Parmesan cheese over the top, followed by dried oregano and black pepper.
  8. Preheat your oven to 425°F (220°C) and bake for 10-12 minutes until the cheese is melted and bubbly, and the tortilla edges are crispy and lightly browned.
  9. Remove from oven and allow to cool for 1-2 minutes before slicing. Cut into 4-6 pieces and serve hot.
