Ingredients

  • 6 oz dried broad noodles or egg noodles
  • 2 eggs
  • 2 tbsp heavy cream
  • 1 tbsp water
  • 2 tbsp butter
  • 4 oz canned ham or Black Forest Ham
  • 0.5 white onion
  • freshly ground black pepper
  • 1 tbsp fresh parsley

Instructions

  1. Fill a large pot with lightly salted water and bring to a rolling boil.
  2. Stir in noodles and return to a boil.
  3. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes.
  4. Reserve about 1/8 cup of the pasta water and set aside.
  5. Add eggs, cream, and water to bowl; whisk to combine.
  6. Season with black pepper.
  7. Heat butter in a large skillet over medium heat.
  8. Add Spam or ham and cook until lightly browned, about 3 minutes.
  9. Add onion and cook until onion is translucent, about 5 minutes more.
  10. Stir cooked noodles into skillet.
  11. Pour egg mixture in and stir until eggs are set.
  12. Remove to a plate, sprinkle with parsley and enjoy!
