Spaghetti Aglio e Olio
The simplest pasta but honestly one of the best. Golden garlic, good olive oil, chili heat and fresh parsley.
Ingredients
- spaghetti
- garlic
- chili flakes
- fresh peperoncini
- extra virgin olive oil
- parsley
- pasta water
Instructions
- Cook spaghetti according to package directions, reserving pasta water before draining.
- Gently sizzle sliced garlic in extra virgin olive oil until golden and fragrant.
- Add chili flakes or fresh peperoncini to the garlic oil.
- Swirl in a splash of reserved pasta water to create a light sauce.
- Toss the hot spaghetti with the garlic oil mixture until every strand is glossy and coated.
- Garnish with fresh chopped parsley and serve immediately.
