Spaghetti Aglio e Olio

The simplest pasta but honestly one of the best. Golden garlic, good olive oil, chili heat and fresh parsley.

Ingredients

  • spaghetti
  • garlic
  • chili flakes
  • fresh peperoncini
  • extra virgin olive oil
  • parsley
  • pasta water

Instructions

  1. Cook spaghetti according to package directions, reserving pasta water before draining.
  2. Gently sizzle sliced garlic in extra virgin olive oil until golden and fragrant.
  3. Add chili flakes or fresh peperoncini to the garlic oil.
  4. Swirl in a splash of reserved pasta water to create a light sauce.
  5. Toss the hot spaghetti with the garlic oil mixture until every strand is glossy and coated.
  6. Garnish with fresh chopped parsley and serve immediately.
