One Pan Cajun Lime Chicken
Easy, super creamy one pan chicken dish with the perfect balance of Cajun seasoning and lime
Ingredients
- 600 g chicken thighs
- 1 tbsp cajun seasoning
- 1 tsp smoked paprika
- 1 tsp onion granules
- 1 tsp garlic granules
- 1 tsp oregano
- 1 tbsp extra virgin olive oil
- 1 shallot
- 1 sweet red pepper
- 3 garlic cloves
- 1 tsp smoked paprika
- 1 tsp cajun seasoning
- 200 ml chicken stock
- 150 ml single cream
- 100 g cherry tomatoes
- 1 lime
- 125 g basmati rice
- 1 tbsp soured cream
- 50 g tender stem broccoli
Instructions
- Season the 600g chicken thighs with cajun seasoning, smoked paprika, onion granules, garlic granules, and oregano
- Heat extra virgin olive oil in a large pan and cook the seasoned chicken thighs until browned
- Add finely chopped shallot and sweet red pepper to the pan, sauté until softened
- Add crushed garlic cloves and cook briefly
- Add smoked paprika and cajun seasoning to the sauce ingredients
- Pour in chicken stock and single cream, stirring to combine
- Add cherry tomatoes to the pan
- Squeeze the lime juice into the pan and add the lime halves
- Simmer until chicken is cooked through and sauce is creamy
- Serve over cooked basmati rice with a dollop of soured cream and tender stem broccoli on the side
