Authentic Zhug Sauce

A spicy Arabic green herb sauce with fresh parsley, cilantro, garlic, green chilli, lemon juice, olive oil, and warm spices like cumin or cardamom. Perfect for serving with lamb roast.

Ingredients

  • 1 cup Fresh parsley
  • 1 cup Fresh cilantro
  • 4 cloves Garlic
  • 2 piece Green chilli
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Ground cardamom

Instructions

  1. In a blender or food processor, combine parsley, cilantro, garlic, green chilli, lemon juice, and olive oil.
  2. Blend the mixture until smooth.
  3. Add cumin and cardamom, and blend until well combined.
  4. Taste and adjust seasoning as needed.
  5. Transfer the Zhug sauce to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
