Tortilla Kebab Skewers (Air Fryer)
These viral tortilla kebab skewers are irresistibly crispy on the outside and tender on the inside, made with just 3 main ingredients. Created by Le mille ricette di Vale & friggitrice ad aria, this easy recipe uses ground meat, cheese, and tortillas layered and skewered for a restaurant-quality appetizer that will impress everyone.
Ingredients
- 4 tortillas or piadine
- 450 g lean ground beef or chicken
- 120 g provola cheese (or stretchy cheese)
- 1 tbsp smoked paprika
- 1 tsp salt
- cooking oil spray
- 150 g Greek yogurt 0% fat
- 2 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tsp smoked paprika
Instructions
- Cut the tortillas into squares
- Mix the ground meat with smoked paprika and salt
- Spread the meat mixture on the tortillas and top with grated provola cheese
- Stack the tortillas on top of each other
- Divide the stack into 4 strips, rotate them on their side and bring them together
- Insert 4 long wooden skewers through the stacked strips
- Cut into 4 pieces to create individual skewers
- Spray lightly with oil
- Cook in air fryer at 200°C for 10 minutes, flipping halfway through (or in oven at 200°C for 15 minutes, or in a pan with a drizzle of oil on low heat for 10-12 minutes, turning frequently)
- For the pink sauce, mix Greek yogurt, mayonnaise, ketchup, and smoked paprika
- Serve the skewers with the pink sauce
