Ingredients

  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 500 g mushrooms
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 cup vegetable stock
  • 0.5 cup sour cream or Greek yogurt
  • 1 tablespoon plain flour
  • 1 tablespoon fresh parsley
  • salt and freshly ground black pepper

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the sliced onion and cook for 6–8 minutes until soft and lightly caramelized.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the mushrooms and sauté for 8–10 minutes until they release their moisture and become golden.
  5. Sprinkle in the sweet paprika, smoked paprika, and thyme. Stir well to coat the mushrooms evenly.
  6. Mix in the tomato paste, soy sauce, and Worcestershire sauce, stirring for 1 minute.
  7. Pour in the vegetable stock and bring to a gentle simmer.
  8. In a small bowl, whisk together the flour and sour cream until smooth.
  9. Slowly stir the sour cream mixture into the skillet and simmer gently for 4–5 minutes until thick and creamy. Avoid boiling.
  10. Season with salt and pepper, garnish with chopped parsley, and serve hot over pasta, mashed potatoes, or rice.
