Ingredients

  • 300 g ground beef
  • 1 onion
  • 3 garlic cloves
  • 1 tbsp tomato paste
  • 1 tsp chipotle paste
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 0.5 tsp cayenne pepper
  • 0.5 tsp chilli flakes
  • salt
  • black pepper
  • 1 tsp Worcestershire sauce
  • 0.5 lime
  • mini flour tortillas
  • vegetable oil
  • 1 cup grated mozzarella
  • 0.5 cup grated mature cheddar
  • 0.5 cup mayonnaise
  • 1 tsp chipotle paste
  • 1 tsp lime juice
  • honey
  • smoked paprika
  • salt
  • 2 tomatoes
  • 0.25 onion
  • cilantro
  • 0.5 cup cucumber
  • 1 lime
  • salt and pepper
  • jalapeño
  • pickled onions
  • shredded lettuce

Instructions

  1. Prepare the salsa by combining all salsa ingredients in a bowl, mix well, and leave aside.
  2. Make the chipotle sauce by stirring together all sauce ingredients until creamy and smooth. Chill until serving.
  3. Cook the beef by heating a pan with a little oil over medium-high heat. Add the beef and leave it for 2–3 minutes to brown before breaking it apart.
  4. Add onion and cook for 3 minutes.
  5. Mix in garlic, tomato paste, chipotle paste, spices, seasoning, and chilli flakes. Cook for 1 minute, then add Worcestershire sauce if using.
  6. Continue cooking until the filling becomes rich and slightly dry. Stir through lime juice at the end.
  7. Build the tacos by warming a lightly oiled pan over medium heat. Place in a tortilla and add a thin layer of cheese, followed by the beef, then another sprinkle of cheese.
  8. Fold the tortilla and gently press down. Cook for 2–3 minutes on each side until crisp and golden. Repeat with remaining tortillas.
  9. Serve the tacos finished with fresh salsa, chipotle sauce, and any optional toppings. Enjoy straight away for the best crispy texture.
