The 10-Minute Cowboy Coleslaw I Make for Every Summer Party

This quick and easy cowboy coleslaw recipe combines cabbage, black beans, and corn in a hearty, make-ahead side perfect for cookouts and potlucks.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup freshly squeezed lime juice (from 2 large limes)
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper, optional
  • 1 (14 to 16-ounce) bag shredded coleslaw mix
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can fire-roasted corn, drained, or 1 1/2 cups thawed frozen fire-roasted corn
  • 1 red bell pepper, chopped

Instructions

  1. In a large bowl, mix the mayonnaise, lime juice, paprika, salt, black pepper, and cayenne pepper (if using) until smooth.
