Baked Zucchini with Tomato Sauce and Cheese Crust

Ingredients
- 3 pcs Zucchini
- 1 pcs Red onion
- 3 cloves Garlic
- 250 g Canned tomatoes
- 3 tbsp Olive oil
- Salt
- Black pepper
- 1 tsp Italian herbs
- 150 g Hard cheese
- 0.5 cup Breadcrumbs
- 2 tbsp Dill
- 3 tbsp Mayonnaise
- 3 tbsp Greek yogurt
- 1 tbsp Mustard
Instructions
- Slice zucchini into thin pieces, salt them, and leave for 15 minutes to release moisture.
- Pat the zucchini dry with a paper towel.
- Fry zucchini on both sides in olive oil until golden brown.
- For the tomato sauce: sauté chopped red onion in olive oil, add minced garlic, then add canned tomatoes and Italian herbs. Simmer for 15 minutes.
- In a bowl, mix grated hard cheese with breadcrumbs and chopped dill.
- In a baking dish, create layers: zucchini, tomato sauce, cheese-breadcrumb mixture. Repeat until all ingredients are used, ending with cheese on top.
- Bake at 180°C (350°F) for 20 minutes until the cheese is golden and bubbly.
- For the sauce: mix mayonnaise, Greek yogurt (or sour cream), mustard, minced garlic, and dill.
- Serve the baked zucchini hot with the yogurt sauce on the side.
