Pistachio Cheesecake Brownies
Rich fudgy brownies swirled with creamy cheesecake filling and pistachio spread, created by mycozybakesbyabyz. This decadent dessert combines the best of chocolate and pistachio flavors with a shiny, crinkly brownie top and a perfectly balanced texture that's best enjoyed after chilling.
Ingredients
- 2 large eggs
- 1 egg yolk
- 200 g powdered sugar
- 50 g light brown sugar
- 115 g melted butter
- 45 g oil
- 0.5 tsp coffee powder
- 45 g cocoa powder
- 85 g all purpose flour
- 90 g chocolate chips
- 8 oz cream cheese
- 50 g granulated sugar
- 1 large egg
- 0.75 cup pistachio spread
Instructions
- In a bowl, whisk the eggs, egg yolk, powdered sugar, and brown sugar vigorously for about 2 minutes until smooth and the powdered sugar has completely dissolved.
- Add the melted butter, oil, and coffee powder, then whisk until well combined.
- Add the flour, cocoa powder, and chocolate chips, and fold gently using a spatula. Do not overmix; stop mixing once no streaks of flour and cocoa powder remain.
- Make the cream cheese filling by mixing the soft cream cheese, sugar, and egg until smooth and creamy.
- Transfer 2/3 of the brownie batter to a parchment-lined 8x8 pan, then add dollops of pistachio spread and cheesecake filling.
- Top with the remaining brownie batter and add more dollops of pistachio spread and cheesecake. Use a toothpick to swirl the batter.
- Bake in a 350°F (180°C) preheated oven for 30-35 minutes or until edges are set and center still looks a little soft.
- Cool completely before slicing, then refrigerate for 2-3 hours for best texture.
