Crispy Dumplings

Make amazing crispy dumplings in just 30 minutes without spending hours folding! This super easy and quick recipe combines a simple dough with flavorful chicken filling and a homemade chilli oil that takes these dumplings to the next level.

Ingredients

  • 2 cup flour
  • 0.25 tsp salt
  • 130 ml hot water
  • 250 g chicken mince
  • 1 tbsp cornflour
  • 1 tbsp soy sauce
  • 0.5 tbsp dark soy sauce
  • salt
  • pepper
  • 3 tbsp green onion
  • 0.5 tbsp ginger garlic
  • 0.5 cup water
  • 1 tsp sesame oil
  • 1 tbsp garlic
  • 2 tbsp soy sauce
  • 1.5 tbsp brown sugar
  • 1 tsp sesame seeds
  • 1 tbsp chilli flakes
  • 0.5 tsp sesame oil
  • 4 tbsp oil
  • 1.5 tbsp vinegar
  • 1 tbsp dark soy sauce
  • 2 tbsp hot water
  • 1 tbsp spring onion greens
  • 2.5 tbsp oil
  • 0.5 cup water

Instructions

  1. Mix chicken mince, cornflour, soy sauce, dark soy sauce, salt, pepper, green onion, ginger garlic, water, and sesame oil together until well combined.
  2. Whisk flour and salt together. Add hot water and carefully knead into a medium dough. Cover and let it rest for 20-30 minutes.
  3. Divide dough in two. Roll each portion about 1/16 of an inch thick and cut 3-3.5 inch circles until all dough is used. Keep covered to prevent drying.
  4. Scoop about a tablespoon of chicken mixture into each dumpling wrapper and scrunch at the top.
  5. Heat 2-3 tbsp oil until hot. Snugly place dumplings flat side down in the hot oil and fry for 2-3 minutes on medium heat.
  6. Add 0.5 cup of water and cover immediately. Let dumplings cook for 15-17 minutes on medium-low heat until all water has evaporated.
  7. While dumplings cook, prepare chilli oil: Add garlic and chilli flakes to 4 tbsp oil in a small saucepan and cook on very low flame for 12-15 minutes. Cool for a few minutes. Add soy sauce, brown sugar, sesame seeds, sesame oil, vinegar, dark soy sauce, and hot water. Sprinkle with green onion and adjust flavors to taste.
  8. Sprinkle cooked dumplings with extra spring onion greens. Serve hot with chilli oil.
