Cow Foot Soup (Cow Heel Soup)

This cow foot soup (cow heel soup) is comfort food in a bowl. It is hearty and flavorful, rich in collagen and nutrients, and can be enjoyed in any season!

Ingredients

  • 3 lb cow feet
  • 1 onion (chopped)
  • ¼ cup olive oil
  • 2 tsp arrowroot powder
  • 1 habanero pepper
  • ½ red bell pepper (chopped)
  • 2 scallions (chopped)
  • 1 tsp bouillon powder
  • 1 tsp crayfish ( substitute with coconut aminos)
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • ½ tsp salt (or to taste)

Instructions

  1. Turn the instant pot to sauté mode.
  2. Add olive oil to the instant pot, then add the chopped onions.
  3. Sauté for about a minute, then add about a half cup of water.
  4. Add the cow feet and the spices.
  5. Stir till the cow feet is well coated with the spices.
  6. After about 2-3 minutes, pour in about 3-4 cups of water, or just enough to cover the cow feet.
  7. Place the instant pot lid back on and switch to manual mode. Set to 30 minutes on high pressure.
  8. When the instant pot timer goes off, let it naturally release for 10 minutes before you quick-release the pressure.
  9. Turn the instant pot back to sauté mode.
  10. Add the chopped red bell pepper, and whole habanero pepper and let cook for about 5-10 minutes.
  11. Taste for salt and adjust if necessary.
  12. Combine 2 teaspoons of arrowroot powder and 1 tablespoon of water in a small bowl to make a slurry, and whisk together.
  13. Pour it into the cow foot soup and let it cook till it thickens.
  14. Garnish with scallions and serve!
