Curry Cauliflower Rice
This curry cauliflower rice, made with scallions and red bell peppers, is a fast and easy low carb dinner ready in just 20 minutes!
Ingredients
- 4 tbsp olive oil
- 1/2 onion (chopped)
- 2 cloves garlic (minced)
- 1 cup red bell pepper (chopped)
- 2 scallions (chopped)
- 1.5 tbsp curry powder
- 1/2 tsp black pepper
- 1/2 tsp bouillon powder
- 1/2 tsp thyme
- 1/2 tsp salt (to taste)
- 1 lb cauliflower rice
- cilantro (to garnish)
Instructions
- Add olive oil to a large skillet and heat.
- Sauté the onions and garlic till translucent.
- Add the red bell peppers and scallions and cook for 5 minutes.
- Add all the spices and stir.
- Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often.
- Taste for salt and adjust.
- Add optional garnish.
