Curry Cauliflower Rice

This curry cauliflower rice, made with scallions and red bell peppers, is a fast and easy low carb dinner ready in just 20 minutes!

Ingredients

  • 4 tbsp olive oil
  • 1/2 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup red bell pepper (chopped)
  • 2 scallions (chopped)
  • 1.5 tbsp curry powder
  • 1/2 tsp black pepper
  • 1/2 tsp bouillon powder
  • 1/2 tsp thyme
  • 1/2 tsp salt (to taste)
  • 1 lb cauliflower rice
  • cilantro (to garnish)

Instructions

  1. Add olive oil to a large skillet and heat.
  2. Sauté the onions and garlic till translucent.
  3. Add the red bell peppers and scallions and cook for 5 minutes.
  4. Add all the spices and stir.
  5. Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often.
  6. Taste for salt and adjust.
  7. Add optional garnish.
