These crispy smash dumplings feature a flavorful beef and vegetable filling inspired by gyoza, cooked using a smash burger technique to create a golden, crunchy crust. Served with fresh shredded vegetables, teriyaki sauce, and crispy chilli oil for an irresistible appetizer or snack.

Ingredients

  • 200 g minced beef
  • 4 green onion
  • 0.5 cup cabbage or pak choy
  • 1 ginger
  • garlic
  • 1 tbsp soy sauce
  • 1 tbsp mirin or shaoxing rice wine
  • 1 tbsp itsu teriyaki sauce
  • 1 tsp sesame oil
  • pepper
  • frozen dumpling wrappers
  • shredded vegetables
  • coriander or spring onion
  • itsu crispy chilli oil

Instructions

  1. Finely chop cabbage and salt it to release moisture.
  2. Combine the dumpling filling ingredients (including the strained cabbage) and stir until combined.
  3. Spoon 1.5 tbsp of the mixture onto defrosted dumpling wrappers and firmly spread up to the perimeter of the dough.
  4. Grill on medium high heat for 5-7 minutes or until it develops a brown crust, pressing firmly like a smash burger patty.
  5. Flip and finish on other side for 2 minutes.
  6. Serve with fresh shredded vegetables, extra drizzle of teriyaki, and crispy chilli oil.
