Hyderabadi Chicken Masala
This authentic Hyderabadi Chicken Masala is a rich and aromatic curry that showcases the traditional flavors of Hyderabad with a perfect blend of warm spices, fried onions, and creamy yogurt. Created by Neha Home Kitchen, this restaurant-style chicken masala features a complex spice profile with cashews and cardamom that creates a deeply satisfying and flavorful dish perfect for special occasions.
Ingredients
- 500 g Chicken
- 1 cup Fried onions
- 1 tsp Cumin seeds
- 1 tsp Coriander seeds
- 0.5 tsp Black pepper
- 2 inch Cinnamon
- 8 Cashew
- 1 tsp Ginger Garlic paste
- 0.25 cup Coriander leaves
- 4 Dry red chilli
- 1 cup Curd
- 1 tsp Red chilli powder
- 1 Onion
- 2 cups Oil
- 1 tsp Salt
- 2 Green chilli
- 1 Black cardamom
- 4 Cardamom
- 1 tsp Turmeric powder
Instructions
- Heat oil in a heavy-bottomed pot or pressure cooker
- Add cumin seeds, coriander seeds, black pepper, cinnamon, black cardamom, and cardamom to temper the oil
- Add sliced onions and fry until golden brown
- Add ginger-garlic paste and sauté for 1-2 minutes
- Add chicken pieces and cook on high heat until partially cooked
- Add yogurt/curd and mix well
- Add red chilli powder, turmeric powder, and salt
- Add cashews and dry red chillies
- Cover and cook in pressure cooker for 2-3 whistles or until chicken is tender
- Once cooked, open the lid and add fried onions
- Garnish with fresh coriander leaves and green chillies
- Simmer for 2-3 minutes and serve hot
