Чылбыр (Chylbyr)
A simple yet elegant poached egg dish from professional chef Max Galishnikov, featuring soft poached eggs served with a creamy yogurt-herb sauce and aromatic spiced butter. This traditional recipe combines Greek yogurt, fresh dill, and warm spices for a restaurant-quality breakfast or brunch that's surprisingly easy to prepare at home.
Ingredients
- 2 Eggs
- 1 tbsp Vinegar
- 20 g Butter
- 1 g Sweet paprika
- 1 g Hops and suneli (Khmeli suneli)
- 70 g Greek yogurt
- 7 g Dill
- 2 g Garlic
- Salt
- Black pepper
- Chili flakes
Instructions
- Boil water and add salt and vinegar
- Place eggs in a sieve and poach in the boiling water for 3 minutes
- Mix Greek yogurt with dill, garlic, salt, and pepper
- Melt butter and add paprika, hops and suneli, and chili flakes
- Plate the poached eggs and top with the yogurt sauce
- Drizzle the spiced butter over the eggs
- Garnish with fresh dill and serve with fried bread
