Smoked Alabama Chicken

This smoked Alabama chicken recipe combines a buttermilk and pickle juice brine to keep the chicken incredibly juicy, finished with a classic Alabama white sauce glaze over live smoke. Ingredients

  • 1.000 whole chicken
  • 3.000 cup buttermilk
  • 1.000 cup pickle juice
  • 2.000 tablespoon Duce's Wild Poultry Rub

  • Duce's Wild Alabama White Gold BBQ Sauce

Instructions

  1. In a large bowl, combine 3 cups of buttermilk, 1 cup of pickle juice, and 2 tablespoons of Duce's Wild Poultry Rub.
  2. Add the chicken halves to the brine, ensuring they're fully submerged. Cover the bowl and refrigerate for at least 2 hours.
  3. While the chicken is brining, preheat your Gateway Drum Smoker to 325 degrees Fahrenheit.
  4. After brining, remove the chicken from the mixture and pat it dry.
  5. Generously apply Duce's Wild Poultry Rub on both sides of the chicken.
  6. Place the chicken halves on the smoker, skin side up.
  7. Smoke until the internal temperature reaches 165 degrees Fahrenheit, usually about 1 hour (time may vary depending on your smoker and the size of the chicken).
  8. Once the chicken has reached the correct internal temperature, remove it from the smoker and quickly dunk it in Duce's Wild Alabama White Gold BBQ Sauce, ensuring the chicken halves are fully covered.
  9. Return the chicken to the smoker for an additional 10 minutes to set the sauce and give it a glossy finish.
  10. Remove the chicken from the smoker and let it rest for a few minutes before serving.
  11. Serve with warm cornbread and a side of bread-and-butter pickles.
