Шкмерули
Discover this beloved Georgian dish where tender, juicy chicken is seared to perfection and smothered in a velvety, aromatic garlic and cream sauce. Created by Анастасия Скрипкина, this recipe proves that the simplest ingredients can create extraordinary flavors when combined with proper technique. Traditionally served with Georgian flatbread, Шкмерули is an impressive yet surprisingly easy dish that will delight any dinner table.
Ingredients
- 1.25 kg chicken
- 500 ml heavy cream
- 6.5 garlic cloves
- 1 tsp khmeli suneli
- 0.25 tsp red chili pepper
- fresh herbs
- salt
- vegetable oil
Instructions
- Trim the wing tips and tail from the chicken.
- Split the chicken along the breastbone.
- Salt the chicken pieces.
- Flip the chicken and salt the other side.
- Coat a baking dish or skillet with oil and place the chicken pieces in it.
- Place a weight on top of the chicken and bake for 20-25 minutes.
- Flip the chicken and bake for another 20-25 minutes without the weight. Remove the chicken and set aside.
- In a mortar, crush the garlic cloves (divided into 2-4 pieces) with about 1 teaspoon of salt. If you don't have a mortar, finely mince the garlic and mix with salt.
- In the same baking dish where the chicken was cooked, add the crushed garlic.
- Fry the garlic until golden brown.
- Add the room temperature cream or milk, keeping the heat low.
- Add the red chili pepper and khmeli suneli, and stir well.
- Add the finely chopped fresh herbs and mix.
- Bring the sauce to a boil.
- Cut the chicken into 4-6 pieces and place back in the sauce.
- Simmer on low heat for 7-10 minutes. Serve hot with flatbread.
