  • 1.5 lb boneless chicken thighs
  • 2 tbsp vegetable oil
  • 1 large onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 0.5 tsp chili powder
  • 1 cup chicken broth
  • salt
  • pepper
  • fresh cilantro

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chopped onion and cook until golden brown, about 8-10 minutes.
  3. Stir in garlic and ginger and cook for 1 minute until fragrant.
  4. Add cumin, coriander, paprika, turmeric, garam masala, and chili powder. Stir for 30 seconds.
  5. Add tomato paste, diced tomatoes, tamarind paste, and brown sugar. Mix well.
  6. Stir in chicken broth and bring to a simmer.
  7. Add diced chicken and cook uncovered for 20-25 minutes until chicken is tender and cooked through.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
