Chicken Pathia Curry

Ingredients
- 1.5 lb boneless chicken thighs
- 2 tbsp vegetable oil
- 1 large onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 14 oz diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp garam masala
- 0.5 tsp chili powder
- 1 cup chicken broth
- salt
- pepper
- fresh cilantro
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add chopped onion and cook until golden brown, about 8-10 minutes.
- Stir in garlic and ginger and cook for 1 minute until fragrant.
- Add cumin, coriander, paprika, turmeric, garam masala, and chili powder. Stir for 30 seconds.
- Add tomato paste, diced tomatoes, tamarind paste, and brown sugar. Mix well.
- Stir in chicken broth and bring to a simmer.
- Add diced chicken and cook uncovered for 20-25 minutes until chicken is tender and cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
