Spicy Brazilian-Style Coconut Chicken Stew

Ingredients
- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 1 red bell pepper
- 1.5 fresh red chilies
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 14 oz coconut milk
- 0.5 cup chicken broth
- 1 lime
- salt
- pepper
- 0.25 cup fresh cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and bell pepper until softened, about 5 minutes.
- Add chopped chilies, smoked paprika, cumin, and coriander. Stir for 1-2 minutes until fragrant.
- Add chicken pieces, season with salt and pepper, and brown on all sides for about 5 minutes.
- Pour in coconut milk and chicken broth. Stir well, bring to a simmer, then reduce heat and cover. Cook until chicken is tender, about 15 minutes.
- Stir in lime juice, adjust seasoning as needed, and remove from heat.
- Garnish with fresh cilantro and serve hot over steamed rice or with crusty bread.
