Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1.5 fresh red chilies
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp ground coriander
  • 14 oz coconut milk
  • 0.5 cup chicken broth
  • 1 lime
  • salt
  • pepper
  • 0.25 cup fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and bell pepper until softened, about 5 minutes.
  2. Add chopped chilies, smoked paprika, cumin, and coriander. Stir for 1-2 minutes until fragrant.
  3. Add chicken pieces, season with salt and pepper, and brown on all sides for about 5 minutes.
  4. Pour in coconut milk and chicken broth. Stir well, bring to a simmer, then reduce heat and cover. Cook until chicken is tender, about 15 minutes.
  5. Stir in lime juice, adjust seasoning as needed, and remove from heat.
