Ingredients

  • 1 kg ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 1 green bell pepper
  • 3 cloves garlic
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 2 cans kidney beans
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 0.5 tsp cayenne pepper
  • 1 tbsp brown sugar
  • salt
  • black pepper
  • shredded cheddar cheese
  • sour cream
  • jalapeños
  • green onions
  • cornbread

Instructions

  1. Heat olive oil in a large heavy pot over medium heat.
  2. Add diced onion and green bell pepper, cooking until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  5. Stir in chili powder, smoked paprika, cumin, oregano, cayenne pepper, salt, and black pepper.
  6. Add diced tomatoes, tomato sauce, kidney beans, beef broth, and brown sugar. Stir well to combine.
  7. Bring to a simmer, then reduce heat to low.
  8. Cover partially and cook for 1 hour 30 minutes, stirring occasionally until thick and flavorful.
  9. Taste and adjust seasoning if needed.
  10. Serve hot with your favorite toppings and warm cornbread.
