This vibrant and healthy Piyaz Salad from Ozlem's Turkish Table gets ready in no time with a delicious combination of red onions, tomatoes, and fresh parsley infused with tangy sumac. The salad is traditionally enjoyed alongside Turkish meatballs (Kofte) and Lahmacun (Turkish thin pizza), though it also pairs wonderfully with cheese, olives, and hummus for a refreshing, zingy flavor.

Ingredients

  • 3 medium tomatoes
  • 1 red onion
  • 1 bunch flat leaf parsley
  • 1 lemon
  • 0.5 teaspoon salt
  • 15 ml extra virgin olive oil
  • 10 ml ground sumac
  • 0.5 teaspoon paprika flakes
  • freshly ground black pepper

Instructions

  1. Rub and work sumac and the salt into the onion slices with your hands really well to soften the onions and help spices infuse in well.
  2. Stir in the chopped tomatoes, parsley and paprika flakes, and combine well.
  3. Whisk together the extra virgin olive oil and lemon juice and pour over the piyaz salad.
  4. Season with more salt if needed and freshly ground black pepper to taste.
  5. Serve Piyaz Salad with feta cheese, olives and/or hummus for a delicious spread, or as an accompaniment to Lahmacun and Turkish meatballs (kofte).
