Peruvian Chupe Soup

Ingredients
- 500 g Chicken
- 200 g Onion
- 150 g Celery
- 100 g Green beans
- 100 g Green peas
- 10 g Garlic
- Cilantro
- 250 g Quinoa
- 0.5 tsp Cumin
- 0.5 tsp Chili
- 0.5 tsp Dried ginger
- 1 Lime
- 1.8 L Broth
Instructions
- Prepare the chicken by cutting into pieces if needed
- Chop the onion, celery, and garlic
- Heat broth in a large pot and add chicken pieces
- Add chopped onion, celery, and garlic to the broth
- Add quinoa to the pot with the optimal amount of 1.8 liters of broth
- Season with cumin, chili, and dried ginger
- Add green beans and green peas to the soup
- Simmer until chicken is cooked through and quinoa is tender
- Finish with fresh cilantro and lime juice before serving
