Ingredients
- 2 lbs beef
- 0.5 cup white wine
- 0.25 cup olive oil
- 6 cloves garlic
- 2 tablespoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 bay leaf
- 1 tablespoon vinegar
- 0.5 teaspoon crushed red pepper flakes
- 1 cup water or beef broth

Instructions
- In a large bowl, combine beef, white wine, olive oil, garlic, paprika, cumin, black pepper, salt, bay leaf, vinegar, and red pepper flakes.
- Mix well, cover, and marinate in the refrigerator for at least 4 hours or overnight for best flavor.
- Transfer the marinated beef and all the marinade into a large pot.
- Add water or beef broth and bring to a boil.
- Reduce heat to low and simmer for 1 1/2 to 2 hours until the beef is tender.
- Stir occasionally and add more liquid if needed to maintain a saucy consistency.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot with crusty bread or in sandwich rolls, optionally with pickled vegetables.
