Ingredients
- 1 medium onion
- 5.5 garlic cloves
- 3 tbsp pickled jalapeños
- 2 tbsp olive oil
- 1 tbsp paprika
- 0.5 tsp cumin powder
- 0.5 cup pureed tomatoes
- 0.5 tbsp dried oregano
- 0.25 tsp salt
- 1 lb ground chicken
- 0.25 cup cilantro
- 4 flour tortillas
- 1.5 cup shredded cheese
- 1 tbsp olive oil
Instructions
- Finely chop 1 medium onion and lightly crush and finely chop 5-6 garlic cloves
- Chop about 3 tbsp of pickled jalapeños
- Heat 2 tbsp olive oil in a pan and sauté onion and garlic until translucent
- Add 1 tbsp paprika (sweet or smoked) and 0.5 tsp cumin powder
- Add 0.5 cup pureed tomatoes and mix well
- Add 0.5 tbsp dried oregano and 0.25 tsp salt
- Cook until the sauce thickens
- Add 1 lb ground or finely chopped chicken and mix well
- Cook on high flame to prevent chicken from releasing water until cooked through
- Mix in chopped jalapeños and cilantro/coriander
- Heat a tortilla on a lightly oiled skillet or wide pan
- Flip once the bottom is warmed
- Add a layer of shredded cheese followed by the chicken filling
- Gently fold over the tortilla and lightly pat to secure it
- Fry the quesadilla on both sides until lightly crisp on the outside and molten on the inside
- Cut in half and serve hot
