  • 1 lb (approx) saltfish or cutfish
  • 0.5 cup (approx) onion
  • 2 cloves (approx) garlic
  • 2 tbsp (approx) pimento peppers
  • 1 tbsp (approx) fresh thyme
  • 2 tbsp (approx) scallions (quantum/shallot benny)
  • 0.5 tbsp (approx) hot peppers
  • 2 cups all-purpose flour
  • 0.5 tsp (approx) salt
  • 1 tsp (approx) baking powder
  • 0.5 tsp (approx) yeast
  • 0.5 tsp (approx) sugar
  • 1 tsp (approx) all-purpose seasoning
  • 0.25 tsp (approx) black pepper
  • 0.75 cup (approx) warm water
  • 2 cups (approx) oil for frying

Instructions

  1. Boil and mince the saltfish or cutfish finely
  2. Finely chop onion, garlic, pimento peppers, fresh thyme, scallions, and hot peppers and set aside
  3. In a large bowl, combine 2 cups all-purpose flour with salt, baking powder, yeast, sugar, all-purpose seasoning, and black pepper
  4. Mix the dry ingredients well
  5. Add the minced saltfish and chopped aromatics to the flour mixture
  6. Mix everything together until well combined
  7. Gradually add warm water while mixing to achieve a batter that is neither too runny nor too thick
  8. Cover the batter and let it rest for about 10 minutes to allow all ingredients to come together
  9. Heat oil in a pot (ensure it's not too hot to avoid burning)
  10. Using a small spoon or scoop, gently drop portions of batter into the hot oil
  11. Fry for approximately 2-3 minutes until the fritters start floating and turn golden brown
  12. Remove fritters to a paper towel to drain excess oil
  13. Repeat with remaining batter
  14. Serve hot with sweet mango sauce or tamarind sauce
