Authentic Jamaican Green Seasoning

Ingredients
- 1 bunch green onions
- 3 cloves garlic
- 1 large onion
- 1 thumb-sized piece ginger
- 2 whole scotch bonnet pepper
- 0.5 cup cilantro
- 0.25 cup basil
- 2 tbsp oregano
- 2 tbsp rosemary
- 0.5 cup parsley
- 0.25 whole sweet pepper, orange
- 0.25 whole sweet pepper, red
- 0.25 cup vinegar
- 1 tbsp allspice berries (pimento seed)
- 0.25 cup olive oil
- 1 whole lemon
- 1 tsp pink Himalayan salt
Instructions
- Wash all vegetables and herbs thoroughly before starting.
- Roughly chop the green onions and add to blender.
- Roughly chop the garlic and add to blender.
- Roughly chop one large onion and add to blender.
- Add a thumb-sized piece of ginger to the blender.
- Remove seeds from scotch bonnet peppers, remove stems, and add to blender.
- Roughly chop cilantro and add to blender.
- Strip basil leaves from stems and add to blender (discard stems).
- Add fresh oregano to the blender.
- Strip rosemary leaves from stems and add to blender (discard stems).
- Roughly chop parsley (removing stems) and add to blender.
- Chop the orange and red sweet peppers and add to blender.
- Add 1/4 cup of vinegar to the mixture.
- Add 1 tablespoon of ground allspice (pimento seed) powder.
- Add 1/4 cup of olive oil to the mixture.
- Squeeze juice from one lemon and add to blender.
- Add 1 teaspoon of pink Himalayan salt.
- Blend all ingredients until smooth.
- Pour finished green seasoning into a jar for storage.
- Store in the refrigerator for up to 2 weeks, or freeze in a bag for up to 2-3 months.
