Restaurant-Quality Seared Fish with Lemon Butter Sauce

Ingredients
- vegetable oil
- 2 white fish fillets
- kosher salt
- 2 sticks salted butter
- 1 shallot
- 2 tablespoons fresh sage leaves
- 0.5 cup lemon juice
Instructions
- Heat vegetable oil in a quality stainless steel pan over high heat until very hot.
- Season the white fish fillets with kosher salt to taste.
- Carefully place the fish fillets in the hot oil and sear until golden brown and cooked through, approximately 4-6 minutes per side depending on thickness.
- While the fish cooks, prepare the lemon butter sauce by melting the salted butter in a separate pan over medium heat.
- Add the minced shallot to the butter and cook until softened, about 2-3 minutes.
- Add the fresh sage leaves to the butter mixture and stir to combine.
- Remove from heat and stir in the freshly squeezed lemon juice.
- Plate the seared fish and drizzle generously with the lemon butter sauce.
