Spicy North African Fish Stew

Hearty fish stew with a Spicy North African Twist, packed with the warmth of cumin, coriander, and chilies, and the brightness of preserved lemons.

Ingredients

  • 1 pound Fish (halibut or cod)
  • 0.25 cup Olive oil
  • 1 Onion
  • 3 Garlic
  • 1 teaspoon Cumin
  • 0.5 teaspoon Coriander
  • 0.25 teaspoon Cayenne pepper
  • 2 tablespoons Chermoula
  • 2 tablespoons Preserved lemons
  • 1 can Tomatoes
  • 2 cups Fish broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, cumin, coriander, and cayenne pepper to the pot. Cook for 1 minute, until fragrant.
  3. Add Chermoula, preserved lemons, and diced tomatoes to the pot. Cook for 2 minutes, until heated through.
  4. Add fish broth, salt, and black pepper to the pot. Bring to a boil, then reduce heat to low and simmer for 10 minutes.
  5. Add fish pieces to the pot and cook for 5-7 minutes, until cooked through.
  6. Serve hot, garnished with fresh parsley or cilantro, if desired.
