  • 12 oz spaghetti or long pasta
  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 14 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 0.5 cup dry red wine
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 1 tsp dried oregano
  • 1 bay leaf
  • salt
  • black pepper
  • 1 tsp sugar
  • 0.25 cup Kefalotyri or Parmesan cheese
  • fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  5. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
  6. Pour in the crushed tomatoes and red wine, stirring to combine.
  7. Add cinnamon, cloves, oregano, bay leaf, salt, pepper, and sugar if needed.
  8. Reduce heat to low and let the sauce simmer for 20–25 minutes until thick and aromatic.
  9. Remove the bay leaf and taste for seasoning adjustments.
  10. Serve the pasta topped generously with the rich beef sauce and finish with grated cheese and fresh parsley.
