Authentic Pakistani Lamb Karahi
This authentic Pakistani lamb karahi is a fiery and aromatic curry that showcases tender boneless lamb cooked with aromatic spices, fresh ginger, garlic, and tomatoes. A beloved Ramadan and everyday dish, this karahi features warm spices like garam masala, cumin, and fenugreek leaves that create a rich, flavorful sauce perfect served with naan or rice.
Ingredients
- 1 kg boneless lamb
- 3 tbsp garlic
- 3 tbsp ginger
- 1 tsp chilli powder
- 1 tsp garam masala
- 1 tsp cumin powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin seeds
- 1 tbsp methi (fenugreek leaves)
- 3 large tomatoes
- 1 tbsp tomato puree
- 0.5 cup water

Instructions
- Heat oil in a karahi or wok over medium-high heat
- Add cumin seeds and let them crackle for a few seconds
- Add minced garlic and ginger, cook until fragrant, about 1-2 minutes
- Add the boneless lamb pieces and cook until browned on all sides, about 8-10 minutes
- Add chilli powder, garam masala, cumin powder, salt, and black pepper. Stir well to coat the lamb
- Add chopped tomatoes and tomato puree, mix thoroughly
- Add water and bring to a simmer
- Cover and cook for 30-35 minutes until lamb is tender and cooked through
- Stir in methi (fenugreek leaves) and cook for another 2-3 minutes
- Garnish with fresh coriander and serve hot
