Ingredients

  • 1 kg boneless lamb
  • 3 tbsp garlic
  • 3 tbsp ginger
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin seeds
  • 1 tbsp methi (fenugreek leaves)
  • 3 large tomatoes
  • 1 tbsp tomato puree
  • 0.5 cup water
  • coriander

Instructions

  1. Heat oil in a karahi or wok over medium-high heat
  2. Add cumin seeds and let them crackle for a few seconds
  3. Add minced garlic and ginger, cook until fragrant, about 1-2 minutes
  4. Add the boneless lamb pieces and cook until browned on all sides, about 8-10 minutes
  5. Add chilli powder, garam masala, cumin powder, salt, and black pepper. Stir well to coat the lamb
  6. Add chopped tomatoes and tomato puree, mix thoroughly
  7. Add water and bring to a simmer
  8. Cover and cook for 30-35 minutes until lamb is tender and cooked through
  9. Stir in methi (fenugreek leaves) and cook for another 2-3 minutes
  10. Garnish with fresh coriander and serve hot
