Harissa-Garlic Aioli

A vibrant and versatile condiment that combines creamy mayonnaise with smoky harissa paste and pungent garlic for a bold, spicy kick. This quick 5-minute aioli is perfect for elevating sandwiches, grilled meats, roasted vegetables, or any dish that needs a flavor boost with heat and tang.

Ingredients

  • 0.5 cup high-quality mayonnaise
  • 1.5 tablespoon harissa paste
  • 2.5 garlic cloves
  • 1 tablespoon fresh lemon juice
  • salt
  • 0.25 teaspoon ground cumin

Instructions

  1. Peel the garlic cloves. For the smoothest aioli, use a microplane or fine grater to grate the garlic into a small bowl. If you don't have a microplane, mince the garlic extremely fine and smash it with the side of your knife into a paste.
  2. Add the 1/2 cup of mayonnaise to the bowl with the grated garlic.
  3. Add the harissa paste (start with 1 tablespoon if you are unsure of the heat), lemon juice, and cumin if using.
  4. Whisk or stir all the ingredients together thoroughly until the sauce is smooth and the color is a uniform, vibrant orange-red.
  5. Taste the aioli and adjust: add more harissa for more heat and smoke, add more lemon juice for tang, add cumin or more garlic for depth, and add a pinch of salt if needed.
