Ingredients

  • 1 cup Fresh flat-leaf parsley
  • 4 cloves Garlic
  • 0.75 cup Extra virgin olive oil
  • 3 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • 1 tsp Red chili flakes
  • 0.5 tsp Coarse sea salt
  • 0.5 tsp Freshly cracked black pepper

Instructions

  1. Finely chop your parsley by hand into tiny flecks, not a puree. Place the parsley in a medium glass bowl.
  2. Stir in the minced garlic, dried oregano, red chili flakes, salt, and black pepper.
  3. Pour in the red wine vinegar and let it sit for 2-3 minutes to pickle the garlic and herbs slightly and deepen the flavor.
  4. Whisk in the extra virgin olive oil until the herbs are fully submerged and the sauce is glossy.
  5. Let the chimichurri sit at room temperature for at least 30 minutes before serving to allow the dried oregano and chili flakes to rehydrate and infuse the oil.
