Crispy Cheesy Chicken Tacos

Ingredients
- 2 lb chicken breast and thighs
- 2 tbsp taco seasoning mix
- 1 tbsp olive oil
- 1 medium onions
- 2 medium tomatoes
- 1 medium green bell pepper
- 0.25 cup coriander
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp lime juice
- 0.5 cup Greek yogurt
- 0.25 cup light mayo
- 2 tbsp chili lime hot sauce
- 2 tbsp milk
- 2 sprays avocado cooking spray
- 0.5 tsp paprika
- 15 count corn tortillas
- 1.5 cup mozzarella cheese
Instructions
- Preheat oven to 400°F (200°C).
- Cube chicken breast and thighs, then add taco seasoning mix and a drizzle of olive oil. Mix until well combined.
- Prepare pico de gallo by combining chopped onions, tomatoes, green bell pepper, fresh coriander, salt, pepper, and lime juice. Mix well and set aside.
- Make the taco sauce by combining Greek yogurt, light mayo, chili lime hot sauce, and milk until smooth and creamy. Mix well.
- Spray a large sheet pan with avocado cooking spray and spread the seasoned chicken evenly across the pan.
- Bake chicken for 25 minutes until golden and juicy.
- Remove chicken from the pan and sprinkle with paprika.
- Dip tortillas in the pan juices, then lay them out on the baking tray.
- Fill each tortilla with mozzarella cheese and baked chicken, then fold.
- Bake folded tacos for 15 minutes until crispy.
- Garnish with pico de gallo and serve with the spicy cream sauce.
