Crispy Colorful Vegetable Nests

Ingredients
- 1 medium zucchini
- 1 medium carrot
- 3 medium potatoes
- 0.5 teaspoon salt
- 2 whole eggs
- 2 tablespoons olive oil
- 0.25 teaspoon black pepper
- 2 whole spring onions
- 2 tablespoons fresh parsley
- 60 g flour
- 100 g mozzarella
- 8 whole cherry tomatoes
- 4 slices smoked bacon
Instructions
- Place the julienned zucchini, carrot, and potatoes in a bowl.
- Salt lightly and let sit for 5 minutes, then squeeze out as much liquid as possible.
- Add the eggs, a drizzle of olive oil, pepper, spring onions, parsley, and flour to the vegetables.
- Mix well until all ingredients are evenly combined.
- Line a baking tray with parchment paper.
- Form small nest shapes with the vegetable mixture on the prepared tray.
- Top each nest with grated mozzarella and a cherry tomato.
- Add smoked bacon on top if making a non-vegetarian version.
- Bake at 180°C (356°F) for 15–20 minutes, until golden and crispy at the edges.
- Serve hot.
