Taco Bell Enchirito
Recreate the beloved Taco Bell Enchirito at home with this easy copycat recipe from Al Dente Diva. This delicious dish combines seasoned ground beef, creamy refried beans, and melted cheddar cheese wrapped in soft flour tortillas and baked in savory enchilada sauce. It's a simple yet satisfying meal that has become an instant family favorite and tastes even better than the original.
Ingredients
- 1.000 lb ground beef
- 1.000 oz taco seasoning packet
- 1.500 cups cheddar cheese
- 1.000 16 oz can refried beans
- 1.000 cup enchilada sauce
- 5.500 flour tortillas
- cooking spray
Instructions
- First, make the ground beef according to the directions on the back of a taco seasoning packet. Keep it warm once it's done.
- Now take each tortilla and add about 2-3 tablespoons of refried beans in the center of each one. With the back of a spoon, spread it all across the middle.
- Now distribute the taco meat evenly between each enchirito covering the refried beans.
- Top with the shredded cheese. Also distribute that evenly but make sure to set half a cup aside for later.
- Then roll the enchirito up and place them seam side down in a baking dish that's been sprayed with cooking spray.
- Now cover with enchilada sauce and the remaining cheese.
- Bake it in a 375 degree oven for about 20 minutes or until the enchilada sauce is bubbly.
- Serve with shredded lettuce, sour cream or whatever else you'd like and enjoy!
