Харчо (Kharcho)
An authentic Georgian beef rib soup from @makc_galishnikov's collection of nearly 600 recipes. This traditional Kharcho features tender marinated ribs simmered for hours in a rich broth, combined with tomatoes, rice, and aromatic Georgian spices like khmeli suneli and adjika for a deeply flavorful and warming dish.
Ingredients
- 1 kg Beef ribs
- 3 l Water
- 3 Onion
- 300 g Canned tomatoes
- 100 g Fresh tomatoes
- 2 Garlic
- 20 g Cilantro and parsley
- 30 g Tkemali sauce (red)
- 50 g Rice
- 10 g Flour
- 4 g Khmeli suneli
- 3 g Adjika
- Salt
- Black pepper
Instructions
- Marinate the ribs in a mixture of spices and salt.
- Sear the marinated ribs for 2 minutes on each side until golden brown and juices release. Add 1 onion to the pan.
- Transfer the seared ribs to a pot with 3 liters of water. Bring to a boil, then reduce heat to low and simmer for 6 hours. Strain the broth.
- Sauté the remaining 2 onions until translucent. Add the canned tomatoes and dust with flour. Simmer for 5 minutes.
- Add the fresh tomatoes, salt, and spices to the tomato mixture.
- Add the well-rinsed rice to the broth and cook for 5 minutes.
- Add the tomato-onion mixture, spices, tkemali sauce, and chopped herbs to the broth. Add the shredded meat from the ribs.
- Cover and let simmer for 20 minutes. Serve hot and enjoy.
