Cold Soba Noodles with Green Onions
A refreshing and quick cold soba noodle dish featuring buckwheat noodles topped with fresh green onions, ham, and a perfectly cooked egg. This light Japanese-inspired meal is finished with a savory soy and mirin dressing, making it an ideal quick recipe for warm days.
Ingredients
- 100 g Soba (buckwheat noodles)
- 1 Green onions
- 70 g Ham
- 1 Chicken egg
- 1 tbsp Light soy sauce
- 1 tbsp Mirin
- Paprika
- Chili
- Sesame seeds
- 1.5 tbsp Vegetable oil
Instructions
- Cook the soba noodles according to package directions until tender
- Drain and rinse the cooked noodles with cold water to cool them completely
- Heat vegetable oil in a pan and cook the egg to your preferred doneness
- Chop the ham into bite-sized pieces
- Chop the green onions into desired lengths
- In a small bowl, mix together the light soy sauce and mirin to create the dressing
- Place the cooled soba noodles in a serving bowl
- Top with chopped ham, cooked egg, and green onions
- Pour the soy-mirin dressing over the noodles
- Sprinkle with paprika, chili, and sesame seeds to taste
- Serve immediately and enjoy
