Steamed Chicken and Leek Dumplings

Ingredients

  • 1 lb ground chicken
  • 1 tbsp ginger
  • 2 garlic cloves
  • 0.25 cup Chinese leek
  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sugar
  • 2 tbsp cornstarch
  • 1 package round dumpling wrappers
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 pinch sesame seeds

Instructions

  1. Combine ground chicken, ginger, garlic, Chinese leek, light soy sauce, dark soy sauce, sesame oil, sugar, and cornstarch in a mixing bowl.
  2. Have dumpling wrappers ready and a small bowl filled with water.
  3. Place 1 tbsp of chicken filling in the middle of a wrapper.
  4. Dip your finger in water and run it around the edge of half of the wrapper.
  5. Fold the wrapper in half and pinch the outside edges together, overlapping as you go, to seal edges in a crescent shape.
  6. Repeat with remaining dumplings.
  7. Dumplings can either be steamed right away, or frozen in a single layer, then placed in an airtight bag or container and frozen until ready to serve.
  8. Line a bamboo steamer with parchment paper or a lettuce leaf.
  9. Lay dumplings in a single layer (not touching) in steamer.
  10. From fresh: Steam over medium heat for about 8 minutes, or until dumplings are cooked through.
  11. From frozen: Steam over medium heat for about 15 minutes, or until dumplings are cooked through.
  12. For dipping sauce, mix soy sauce, Chinese black vinegar, sesame oil, sugar, and crushed roasted sesame seeds together.
  13. Serve dumplings with desired dipping sauce and chili sauce or oil.
