Arugula Pesto Pasta

A creamy and delicious pasta dish made with arugula, walnuts, Parmesan, lemon, and garlic, mixed into hot pasta with a splash of pasta water.

Ingredients

  • 1.000 pound pasta (linguine or fettuccine)
  • 2.000 cups arugula
  • 0.250 cup walnuts
  • 0.500 cup Parmesan cheese
  • 2.000 juice lemon
  • 3.000 cloves garlic
  • 0.500 cup goat cheese (or feta)
  • 0.250 cup olive oil

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
  2. In a food processor or blender, combine the arugula, walnuts, Parmesan cheese, lemon juice, and garlic. Process until smooth and creamy, adding a little pasta water if needed to achieve the desired consistency.
  3. Add the goat cheese (or feta) to the processor and blend until well combined.
  4. Add the arugula pesto to the cooked pasta and toss to combine, adding some reserved pasta water if the pesto seems too thick.
  5. Season with salt and pepper to taste, then serve immediately.
