Arugula Pesto Pasta
A creamy and delicious pasta dish made with arugula, walnuts, Parmesan, lemon, and garlic, mixed into hot pasta with a splash of pasta water.
Ingredients
- 1.000 pound pasta (linguine or fettuccine)
- 2.000 cups arugula
- 0.250 cup walnuts
- 0.500 cup Parmesan cheese
- 2.000 juice lemon
- 3.000 cloves garlic
- 0.500 cup goat cheese (or feta)
- 0.250 cup olive oil
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
- In a food processor or blender, combine the arugula, walnuts, Parmesan cheese, lemon juice, and garlic. Process until smooth and creamy, adding a little pasta water if needed to achieve the desired consistency.
- Add the goat cheese (or feta) to the processor and blend until well combined.
- Add the arugula pesto to the cooked pasta and toss to combine, adding some reserved pasta water if the pesto seems too thick.
- Season with salt and pepper to taste, then serve immediately.
