Garlic Asiago Chicken Cauliflower Rice
A low-carb, one-pan meal featuring chicken breast, cauliflower rice, and a rich garlic Asiago sauce.
Ingredients
- 1.25 pounds boneless, skinless chicken breasts
- 1 head cauliflower
- 3 cloves garlic
- 1.5 cups Asiago cheese
- 0.5 sticks unsalted butter
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt the butter over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove from heat and set aside.
- In the same skillet, add the cauliflower and cook until slightly tender, about 5 minutes. Add the garlic and cook for an additional 1-2 minutes, until fragrant.
- Add the chicken back into the skillet with the cauliflower mixture. Sprinkle the Asiago cheese over the top and stir to combine.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the cheese is melted and bubbly.
- Serve hot and garnish with chopped fresh parsley, if desired.
