Garlic Asiago Chicken Cauliflower Rice

  • 1.25 pounds boneless, skinless chicken breasts
  • 1 head cauliflower
  • 3 cloves garlic
  • 1.5 cups Asiago cheese
  • 0.5 sticks unsalted butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove from heat and set aside.
  3. In the same skillet, add the cauliflower and cook until slightly tender, about 5 minutes. Add the garlic and cook for an additional 1-2 minutes, until fragrant.
  4. Add the chicken back into the skillet with the cauliflower mixture. Sprinkle the Asiago cheese over the top and stir to combine.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the cheese is melted and bubbly.
  6. Serve hot and garnish with chopped fresh parsley, if desired.
