Ingredients

- 0.5 teaspoon red chilli powder
- 0.5 teaspoon garam masala
- 2 tablespoon lemon juice
Instructions
- Marinate the vegetables in yogurt, ginger paste, garlic paste, cumin seeds, coriander powder, turmeric powder, red chilli powder, and garam masala for at least 30 minutes.
- Parboil the basmati rice until 70% done, then cool and store.
- Fry the onions until golden brown and store them in an airtight container.
- Cook the spice-onion-tomato base in bulk, cool, and keep in airtight jars for fast assembly.
- Layer the marinated vegetables, parboiled rice, fried onions, and spice-onion-tomato base in a large pot.
- Steam the entire mixture in a sealed pot for 10-15 minutes, or until the rice is cooked and the flavors have melded together.
- Let the biryani sit covered for 15-20 minutes before serving to allow the flavors to meld and the grains to stay fluffy.
